the BEST blueberry cobbler… ever.

After a weekend full of baseball, I NEEDED to have a good dinner... we were a little over having ballpark hotdogs {even though they taste better at the ballpark for some reason}. I whipped up the Pioneer Woman's hamburgers, which were delicious, and the Best blueberry cobbler... ever. I'm not that original with adjectives that describe my food... I'm pretty sure it always starts out as the Best or the Greatest . Nonetheless, you will want to make this warm summer dessert and you'll be so glad you did. Top it off with a scoop of vanilla ice cream. I'm not sure it gets much better than that.

Let's get started on the Best blueberry cobbler {and a couple of raspberries}...


You want to preheat the oven to 375. In a 8x8 dish, throw in 3 cups of blueberries. I had a few raspberries and blackberries that were getting close to being thrown out, so I added them in. Add 3 tablespoons of sugar, 1/3 cup of orange juice and 1/2 tsp. of cinnamon. Mix it up and set it aside.

In a small bowl, mix together really well 2/3 cup of flour {all purpose}, 1/4 tsp. baking powder, 1 pinch of salt. Set it aside.

In a mixing bowl, cream 1/2 cup of soften butter and 1/2 cup of sugar until fluffy. Beat in 1 egg and 1/2 tsp. of vanilla. Slowly add the flour mixture just until everything is combined.

SONY DSC Drop the mixture over the berries by the spoonful. Trying to cover the berries as much as possible. Bake for 35-40 minutes. Can't you just smell the goodness??? Heaven, I tell you. SONY DSC   You'll end up with this beauty. Full of crust {which is the best part, am I right?} and gooey goodness. SONY DSC   Serve it nice and warm with a good scoop of vanilla ice cream. Go on and enjoy it. I plan on making mini cobblers to take to a picnic dinner this week. I just love summer! Cobbler and Peach Mojitos. Can it get any better? nicole
